Ingredients

  • 4 large fresh beets
  • 2 tablespoons unsalted butter
  • 2 teaspoons granulated sugar
  • 1.5 tablespoons white vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon fresh ground black pepper
  • 2 teaspoons chopped fresh dill (optional)

Directions

Step 1

Wash the beets thoroughly under running water, and trim off their tops and roots without puncturing the skin.

Step 2

Place the beets in a large saucepan and cover them with water. Boil over medium-high heat for 30-40 minutes or until the beets are fork-tender.

Step 3

Once cooked, drain and let the beets cool until they are safe to handle. Peel off their skins by rubbing them gently with your hands or a paper towel.

Step 4

Grate the peeled beets using a box grater or a food processor with a grating attachment.

Step 5

In a large skillet, melt the butter over medium heat.

Step 6

Add the grated beets to the skillet and stir to coat them evenly with butter.

Step 7

Stir in the sugar, vinegar, salt, and black pepper. Mix thoroughly to combine.

Step 8

Cook the beets over medium-low heat for 5-7 minutes, stirring occasionally, until heated through and the flavors meld together.

Step 9

Taste and adjust the seasoning if necessary. Add a sprinkle of fresh dill for garnish, if desired.

Step 10

Serve warm as a side dish to complement your favorite Polish or Eastern European-inspired meals.
