Ingredients

  • 300 grams smoked kielbasa sausage
  • 4 medium Polish dill pickles
  • 8 small baby potatoes
  • 150 grams sharp cheddar cheese
  • 2 tablespoons whole-grain mustard
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley
  • 20 pieces toothpicks or small skewers
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

1. Start by boiling the baby potatoes: Place the potatoes in a pot with water and add a pinch of salt. Bring to a boil and cook for 10-12 minutes, or until fork-tender. Drain and set aside to cool.

Step 2

2. While the potatoes cook, slice the kielbasa sausage into thin rounds about 1 cm thick. Heat olive oil in a skillet over medium heat and cook the kielbasa slices for 2-3 minutes on each side, or until golden and slightly crispy. Remove from the pan and let cool.

Step 3

3. Slice the Polish dill pickles into thick rounds, roughly the same size as the kielbasa slices. Cut the sharp cheddar cheese into cubes, about 1.5 cm each.

Step 4

4. Prepare the mustard-honey dip: In a small bowl, mix the whole-grain mustard and honey until well combined. Set aside for dipping or drizzling later.

Step 5

5. Assemble the skewers: Onto each toothpick or skewer, thread one slice of kielbasa, one round of pickle, one potato (halved if large), and one cube of cheddar cheese. Repeat until all ingredients are used.

Step 6

6. Arrange the assembled skewers on a serving platter. Drizzle with the prepared mustard-honey dip or serve it on the side for dipping.

Step 7

7. Garnish the platter with chopped fresh parsley and sprinkle lightly with black pepper for an extra flavor boost. Serve immediately and enjoy your Polish-inspired appetizer!
