Ingredients

  • 1 tube or cup Polenta (quick-cooking or pre-cooked roll)
  • 2 tablespoons Olive oil
  • 1 cup Marinara sauce
  • 1 cup Shredded mozzarella cheese
  • 12 pieces Pepperoni slices (optional)
  • 6 leaves Fresh basil leaves (optional)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (optional)

Directions

Step 1

If using a pre-cooked polenta roll, remove it from the packaging and slice it into 1/2-inch thick rounds. If using quick-cooking polenta, prepare it according to package instructions, spreading it into a 1/2-inch thick even layer on a baking sheet. Allow it to cool and set completely, then cut into rounds using a cookie cutter or knife.

Step 2

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 3

Place the polenta rounds on the prepared baking sheet. Brush both sides of each round lightly with olive oil, then season with salt and, if desired, black pepper.

Bake the polenta rounds in the preheated oven for 15 minutes, flipping them halfway through, until they are golden and slightly crispy on the edges.

Remove the baking sheet from the oven and spread about 1 tablespoon of marinara sauce on each polenta round.
