Ingredients

  • 120 grams Polenta (fine or instant)
  • 60 grams All-purpose flour
  • 50 grams Butter (chilled, unsalted)
  • 30 grams Parmesan cheese (finely grated)
  • 60 milliliters Water (cold)
  • 1 teaspoon Salt
  • 1 teaspoon Dried herbs (e.g., thyme or rosemary, optional)
  • 1 tablespoon Olive oil (for brushing)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the polenta, all-purpose flour, grated Parmesan cheese, salt, and dried herbs if using.

Step 3

Cut the chilled butter into small cubes and add it to the dry ingredients. Using your fingertips, rub the butter into the mixture until it resembles coarse breadcrumbs.

Gradually add the cold water, 1 tablespoon at a time, mixing with your hands until the dough comes together but is not sticky. You may not need all the water.
