Ingredients

  • 1 cup Instant polenta
  • 4 cups Water
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 12 units Cherry tomatoes, halved
  • 12 units Fresh basil leaves
  • 1 cup Goat cheese, crumbled
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 unit Cooking spray

Directions

Step 1

In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.

Step 2

Gradually whisk in the instant polenta, stirring constantly to prevent lumps.

Step 3

Reduce heat to low and cook the polenta for 3-5 minutes, stirring frequently, until it thickens.

Remove the polenta from heat and stir in the grated Parmesan cheese and unsalted butter until fully melted and incorporated.

Line a 9x13-inch baking dish with parchment paper and lightly spray with cooking spray.
