Ingredients

  • 500 grams Potatoes
  • 150 grams Smoked bacon
  • 200 grams Button mushrooms
  • 1 medium Onion
  • 100 grams Gruyère cheese
  • 2 cloves Garlic clove
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh thyme
  • 1 tablespoon Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the potatoes and cut them into small cubes (about 1 cm). Rinse them under cold water and pat dry with a clean towel.

Step 2

Heat a large skillet over medium heat and add 1 tablespoon of olive oil and 1 tablespoon of butter. Add the potato cubes, season with a pinch of salt, and cook for 15 minutes, stirring occasionally, until golden and crispy. Remove from the skillet and set aside.

Step 3

In the same skillet, add the smoked bacon cut into small lardons. Cook for 5 minutes until crispy. Remove and set aside with the potatoes.

Step 4

Slice the mushrooms and finely chop the onion and garlic cloves. Add 1 tablespoon of olive oil and the remaining tablespoon of butter to the skillet. Add the onions and garlic, cooking for 2 minutes until fragrant.

Add the mushrooms and cook for another 5 minutes until they release their moisture and begin to brown.

Return the potatoes and bacon to the skillet. Add fresh thyme, salt, and pepper. Stir everything together and cook for another 5 minutes to combine the flavors.

Grate the Gruyère cheese and sprinkle it over the hash. Cover with a lid and cook on low heat for 3-4 minutes until the cheese melts.
