Ingredients

  • 2 cups Flattened rice (poha)
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 2 pieces Green chilies, chopped
  • 1 medium Onion, thinly sliced
  • 0.25 cup Raw peanuts
  • 0.5 teaspoon Sugar
  • 1 teaspoon Salt
  • 8 leaves Curry leaves
  • 1 medium Lemon, juiced
  • 2 tablespoons Fresh coriander leaves, chopped

Directions

Step 1

Rinse the flattened rice thoroughly in a colander under cold water. Let it sit for 5-10 minutes to absorb the moisture and soften. Do not soak it in water as it will make the poha mushy.

Step 2

Heat oil in a large pan over medium heat. Add mustard seeds and let them splutter.

Step 3

Add the raw peanuts and sauté until they turn golden and crunchy.

Step 4

Stir in the chopped green chilies and curry leaves, and sauté for another minute.

Step 5

Add the sliced onion and cook until they become translucent.

Step 6

Sprinkle turmeric powder and add the softened poha. Mix gently to ensure the poha is coated with the turmeric and oil.

Step 7

Add salt and sugar, and mix well while ensuring the poha does not break. Sauté for 2-3 minutes on low heat.

Step 8

Turn off the heat and add lemon juice. Mix thoroughly.

Step 9

Garnish with freshly chopped coriander leaves and serve hot.
