Ingredients

  • 4 pieces (6 ounces each) Salmon fillet, skinless
  • 4 cups Water
  • 1 cup White wine
  • 1 Lemon, sliced
  • 5 sprigs Fresh dill, stems
  • 1 teaspoon Salt
  • 1 teaspoon Black peppercorns
  • 1 cup Sour cream
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh dill, chopped
  • 1 tablespoon Lemon juice
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt (for sauce)
  • 0.25 teaspoon Black pepper (for sauce)

Directions

Step 1

In a large saucepan, combine water, white wine, lemon slices, dill stems, salt, and black peppercorns.

Step 2

Bring the liquid to a gentle simmer over medium heat.

Step 3

Carefully place the salmon fillets into the saucepan, ensuring they are fully submerged in the poaching liquid.

Step 4

Reduce the heat to low and poach the salmon for 8-10 minutes, or until the fish is opaque and cooked through.

Step 5

Using a slotted spatula, gently remove the salmon from the poaching liquid and transfer to a plate. Let it cool completely, then refrigerate for at least 1 hour.

Step 6

To prepare the dill sauce, in a small mixing bowl, whisk together sour cream, mayonnaise, Dijon mustard, chopped dill, lemon juice, minced garlic, salt, and black pepper until smooth. Adjust seasoning to taste.

Step 7

Chill the sauce in the refrigerator for at least 30 minutes to allow the flavors to meld.

Step 8

When ready to serve, arrange the chilled salmon fillets on a serving platter. Drizzle or serve with the dill sauce on the side.

Step 9

Garnish with additional fresh dill if desired, and serve cold.
