Ingredients

  • 8 pieces Fresh apricots
  • 500 ml Water
  • 100 g Granulated sugar
  • 1 piece Vanilla pod
  • 1 strip Orange zest
  • 1 tbsp Lemon juice
  • 1 piece Cinnamon stick (optional)

Directions

Step 1

Wash the apricots thoroughly, then cut them in half and remove the pits.

Step 2

In a medium saucepan, combine the water, granulated sugar, and lemon juice. Stir over medium heat until the sugar has dissolved.

Step 3

Split the vanilla pod lengthwise and scrape out the seeds. Add both the pod and seeds to the saucepan. Also add the orange zest and, if using, the cinnamon stick.

Step 4

Bring the syrup to a gentle simmer over medium heat.

Step 5

Once the syrup is simmering, carefully add the apricot halves to the saucepan. Ensure they are mostly submerged in the liquid.

Step 6

Reduce the heat to low and simmer the apricots for 5–7 minutes, or until they are tender but still hold their shape. Timing may vary depending on the ripeness of the fruit.

Step 7

Using a slotted spoon, remove the apricots from the syrup and transfer them to a serving bowl or platter.
