Preheat your oven to 375°F (190°C).
Season the chicken thighs with salt and pepper on both sides.
Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat.
Place the chicken thighs skin-side down and sear for 4-5 minutes, or until the skin is golden and crispy. Flip the chicken and sear the other side for another 3 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, lower the heat to medium, and add the remaining 1 tablespoon of olive oil.

Transfer the skillet to the preheated oven and bake for 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the skillet from the oven and let the dish rest for 5 minutes.
