Ingredients

  • 500 grams ripe plums
  • 100 grams brown sugar
  • 120 milliliters apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger
  • 2 units garlic cloves
  • 1 unit star anise
  • 0.5 teaspoons chili flakes
  • 100 milliliters water

Directions

Step 1

Wash the plums thoroughly, remove the pits, and roughly chop them into small pieces.

Step 2

Peel the ginger and grate it finely. Mince the garlic cloves.

Step 3

In a medium-sized saucepan, combine the plums, brown sugar, apple cider vinegar, soy sauce, grated ginger, minced garlic, star anise, chili flakes, and water.

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar.

Lower the heat to a simmer and let the mixture cook for 25–30 minutes, stirring occasionally, until the plums are very soft and the sauce begins to thicken.

Remove the star anise and discard it.
