  • 8 whole ripe plums
  • 1 cup white vinegar

  • 0.5 teaspoon black peppercorns
  • 1 inch piece ginger, thinly sliced
  • 1 whole bay leaf

Directions

Step 1

Wash the plums thoroughly and gently pierce each plum a couple of times with a fork or toothpick. This will allow the pickling brine to penetrate the fruit.

Step 2

In a medium saucepan, combine the white vinegar, water, granulated sugar, and kosher salt. Heat over medium heat and stir until the sugar and salt have completely dissolved.

Step 3

Add the cinnamon stick, whole cloves, star anise, black peppercorns, sliced ginger, and bay leaf to the saucepan. Bring the mixture to a gentle simmer and let it cook for 5 minutes to infuse the flavors.
