Ingredients

  • 3 medium Apples (Granny Smith or Honeycrisp, peeled, cored, and diced)
  • 0.25 cups Granulated sugar
  • 0.25 cups Brown sugar
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 1 tablespoons All-purpose flour
  • 1 tablespoons Lemon juice
  • 2 sheets Pre-made pie crusts (or homemade, see note)
  • 1 tablespoons Unsalted butter
  • 1 large Egg
  • 1 tablespoons Milk
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and lemon juice. Cook for 5-7 minutes until the apples start to soften.

Step 3

Add the all-purpose flour to the apple mixture and stir well to thicken the filling. Cook for an additional 2 minutes, then remove from heat. Allow the mixture to cool completely.

Step 4

Roll out the pre-made pie crusts on a floured surface. Use a 4-inch round cutter (or the rim of a large glass) to cut out circles from the pastry. Re-roll scraps as needed to make a total of 16 circles.

Step 5

Place a heaping tablespoon of the cooled apple filling in the center of 8 of the pastry circles. Avoid overfilling to prevent leakage.

Step 6

Brush the edges of each filled circle lightly with water, then place another pastry circle on top. Press along the edges to seal, then crimp with a fork to ensure a tight seal.

Step 7

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of the hand cakes with the egg wash and sprinkle with coarse sugar, if desired.

Step 8

Use a knife to cut small slits on the top of each hand cake to allow steam to escape during baking.

Step 9

Place the hand cakes on the prepared baking sheet and bake in the preheated oven for 18-20 minutes, or until the crust is golden brown.

Step 10

Remove from the oven and let the hand cakes cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature, and enjoy your Plug's Apple Hand Cakes!
