Ingredients

  • 400 grams elbow macaroni pasta
  • 50 grams unsalted butter
  • 50 grams all-purpose flour
  • 500 milliliters whole milk
  • 200 milliliters heavy cream
  • 200 grams cheddar cheese, shredded
  • 100 grams Gruyère cheese, shredded
  • 50 grams blue cheese, crumbled
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams panko breadcrumbs
  • 50 grams parmesan cheese, grated
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F) and grease a large baking dish.

Step 2

Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente according to package instructions. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Cook the roux for 1-2 minutes, whisking constantly.

Step 4

Gradually pour in the milk and heavy cream, whisking continuously to ensure no lumps form. Cook the mixture for 5-6 minutes, or until slightly thickened.

Step 5

Reduce the heat to low and stir in the cheddar, Gruyère, and blue cheese. Mix until all the cheeses are melted and the sauce is smooth.

Step 6

Add the Dijon mustard, paprika, salt, and black pepper to the cheese sauce. Stir to combine.

Step 7

Combine the cooked macaroni with the cheese sauce in a large mixing bowl. Mix well to ensure every piece of pasta is coated.

Step 8

Transfer the macaroni and cheese mixture to the greased baking dish, spreading it out evenly.

Step 9

In a small bowl, combine the panko breadcrumbs, parmesan cheese, and olive oil. Sprinkle this mixture evenly over the top of the macaroni and cheese.

Step 10

Bake the dish in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 11

Remove the dish from the oven and let it sit for 5 minutes before serving. Enjoy your 'Please Don't Feel Blue Macaroni Cheese'!
