Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.25 cup sour cream (optional, for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the olive oil.

Step 2

Once the oil is hot, add the ground beef. Cook until browned, breaking it up into small pieces with a spoon, about 5-7 minutes. Remove any excess grease, if needed.

Step 3

Add the diced onion, garlic, and red bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.

Step 4

Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes until fragrant.

Step 5

Pour in the crushed tomatoes, tomato paste, and beef broth. Stir well to combine.

Step 6

Add the kidney beans and black beans to the pot. Stir everything together.

Step 7

Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust the seasonings, adding more salt, pepper, or spices if desired.

Step 9

Serve the chili hot in bowls, garnished with chopped cilantro. Optionally, top with shredded cheddar cheese and sour cream for extra richness.
