Ingredients

  • 2 pieces Green plantains
  • 3 cups Vegetable oil (for frying)
  • 1 teaspoon Salt

Step 1

Peel the plantains by cutting off both ends and making a shallow vertical slit along the skin. Use your fingers to gently loosen and remove the peel.

Using a mandoline slicer or a sharp knife, slice the plantains into very thin rounds (approximately 1/16 inch thick). The thinner the slices, the crispier the chips will be.

Step 3

Heat the vegetable oil in a large, heavy-bottomed pan or fryer over medium heat. The oil temperature should reach around 350°F (175°C). Test the readiness of the oil by dropping in one plantain slice—it should sizzle immediately.

Step 4

Working in small batches, carefully add the plantain slices into the hot oil without overcrowding the pan. Fry for 2-3 minutes, flipping occasionally, until the chips are golden and crispy.

Step 5

Use a slotted spoon or tongs to remove the chips from the oil. Transfer them to a plate lined with paper towels to drain any excess oil.

Step 6

While the chips are still warm, sprinkle them with salt to taste. Toss gently to ensure even seasoning.
