  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley or cilantro (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Finely chop the onion, mince the garlic, and dice the celery and carrots. Add them to the pot and sauté for 5 minutes or until softened.
