Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 medium ripe plantains
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons tamari sauce or soy sauce
  • 3 tablespoons tamarind paste
  • 2 tablespoons brown sugar
  • 0.5 cup low-sodium chicken broth
  • 2 tablespoons fresh cilantro, chopped
  • 4 pieces kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and dice the ripe plantains into small cubes.

Step 3

In a skillet, heat 2 tablespoons of butter over medium heat. Add the diced plantains and cook for 5-7 minutes until softened and lightly caramelized. Set aside to cool.

Step 4

Using a sharp knife, create a pocket in the thickest part of each chicken breast, being careful not to cut all the way through.

Step 5

In a bowl, mix the cooked plantains, diced onion, minced garlic, 1 teaspoon of olive oil, ground cumin, paprika, and a pinch of salt and pepper. Stuff each chicken breast with this mixture and secure with kitchen twine to hold the filling inside.

Step 6

Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.

Step 7

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 8

While the chicken is baking, prepare the tamarind sauce. In a small saucepan, combine tamarind paste, tamari sauce, brown sugar, and chicken broth. Simmer over medium heat for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Step 9

Once the chicken is done, remove the kitchen twine and serve the stuffed breasts topped with the tamarind sauce. Garnish with fresh cilantro.
