Ingredients

  • 2 ripe plantains
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 scallions (finely chopped)
  • 0.25 cup water
  • 0.5 cup vegetable oil (for frying)

Directions

Step 1

Peel the ripe plantains and mash them thoroughly in a mixing bowl using a fork or potato masher until smooth.

Step 2

Add the all-purpose flour, baking powder, salt, and ground black pepper to the bowl. Mix until combined.

Step 3

Stir in the finely chopped scallions and gradually add the water, mixing until you achieve a thick and slightly sticky batter.

Step 4

In a large skillet, heat the vegetable oil over medium heat. Make sure the oil is hot but not smoking.

Step 5

Using a tablespoon, scoop small portions of the batter and carefully drop them into the hot oil, flattening gently with the back of the spoon to form small fritters.

Step 6

Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.

Step 7

Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Serve the plantain fritters warm on their own or with a dipping sauce of your choice.
