Ingredients

  • 2 pieces Green plantains
  • 500 ml Vegetable oil
  • 1 tsp Salt
  • 1 piece Ripe mango
  • 2 tbsp Lime juice
  • 1 tbsp Honey
  • 1 tsp Chilli powder
  • 1 piece Fresh red chilli
  • 0.25 tsp Salt (for dip)
  • 2 tbsp Water

Directions

Step 1

Peel the green plantains by cutting off both ends and making a shallow lengthwise slit through the peel. Gently separate the skin from the flesh with your fingers or a knife.

Step 2

Slice the plantains into very thin rounds using a mandolin or a sharp knife. Aim for uniform slices to ensure even cooking.

Step 3

Heat the vegetable oil in a deep, heavy-bottomed pan or a fryer to 350°F (175°C).

Step 4

Carefully fry the plantain slices in batches, ensuring they don't overlap in the oil. Cook for 2-3 minutes or until golden and crisp.

Step 5

Remove the chips from the oil with a slotted spoon and drain on paper towels. Immediately sprinkle with salt while they are still hot.

Step 6

To make the chilli mango dip, peel and dice the ripe mango, discarding the pit.

Step 7

Add the mango, lime juice, honey, chilli powder, sliced red chilli, salt, and water to a blender or food processor. Blend until smooth and creamy.
