  • 1 pound Large shrimp, peeled and deveined
  • 12 ounces Fettuccine or linguine pasta
  • 1 cup Coconut milk
  • 1 cup Creamy peanut butter
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Brown sugar
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Vegetable oil
  • 3 stalks Green onions, sliced
  • 0.5 teaspoon Red chili flakes
  • 0.25 cup Cilantro, chopped
  • 0.25 cup Crushed peanuts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 2

In a medium-sized bowl, whisk together the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red chili flakes until smooth. Set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Season the shrimp with salt and black pepper, then add them to the skillet. Cook for 2-3 minutes per side or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
