Ingredients

  • 2 large Ripe plantains
  • 4 tablespoons Ghee (clarified butter)
  • 0.5 cups Sugar
  • 0.25 teaspoons Cardamom powder
  • 2 tablespoons Cashews
  • 2 tablespoons Raisins
  • 0.5 cups Water
  • 0.5 cups Milk

Directions

Step 1

Peel and slice the ripe plantains into thin rounds.

Step 2

Boil the plantain slices in water until soft, about 8–10 minutes. Drain and let them cool slightly before blending.

Step 3

Puree the boiled plantains into a smooth paste using a blender or food processor. Set aside.

Step 4

Heat 2 tablespoons of ghee in a heavy-bottomed pan over medium heat. Add cashews and fry until golden brown. Add raisins and fry until they puff up. Remove and set aside.

Step 5

In the same pan, add the remaining 2 tablespoons of ghee and the plantain paste. Cook on medium heat, stirring constantly to prevent sticking.

Step 6

After 5 minutes, add sugar and mix well. The mixture will thin out slightly as the sugar melts. Keep stirring to avoid burning.

Step 7

Pour in the milk and continue stirring. Cook until the mixture thickens and begins to leave the sides of the pan, about 10 minutes.

Step 8

Add the cardamom powder and mix well. Cook for another 2–3 minutes until the halwa has a glossy texture.

Step 9

Turn off the heat and garnish with the fried cashews and raisins. Mix gently to combine.

Step 10
