Ingredients

  • 6 medium Russet potatoes
  • 1 cup Mayonnaise
  • 1 tablespoon Yellow mustard
  • 2 teaspoons White vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 stalks Celery
  • 0.5 medium Red onion
  • 2 tablespoons Fresh parsley (optional)

Directions

Step 1

Wash and peel the potatoes. Cut them into bite-sized cubes for even cooking.

Step 2

Fill a large pot with water and bring it to a boil. Add a pinch of salt to the water, then carefully add the potato cubes.

Step 3

Cook the potatoes over medium heat until fork-tender, about 12-15 minutes. Be careful not to overcook them, as they should hold their shape.

Step 4

Drain the cooked potatoes and let them cool to room temperature in a large mixing bowl.

Step 5

While the potatoes are cooling, dice the celery and red onion into small pieces and finely chop the parsley, if using.

Step 6

In a small bowl, whisk together the mayonnaise, yellow mustard, white vinegar, salt, and black pepper to form the dressing.

Step 7

Add the diced celery, red onion, and parsley (if using) to the potatoes. Pour the dressing over the top and gently toss until everything is evenly coated.

Step 8

Taste and adjust the seasoning, adding more salt or pepper as needed.

Step 9

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 10

Serve chilled as a side dish and enjoy!
