  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 cup Shredded mozzarella cheese
  • 1 cup Shredded cheddar cheese
  • 1 cup Cooked bacon, crumbled
  • 0.5 cup Diced pepperoni
  • 0.5 cup Pizza sauce
  • 0.5 cup Sour cream (optional, for serving)
  • 2 tablespoons Chopped green onions (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash and thoroughly dry the russet potatoes. Prick each potato several times with a fork.

Place the potatoes directly on the oven rack and bake for 40-50 minutes, or until the skins are crispy and the insides are tender. Remove from the oven and let them cool until they can be handled comfortably.
