Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Scrub the potatoes clean under running water, then pierce each one with a fork a few times to allow steam to escape during baking.
Rub the potatoes with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of salt. Place them on the prepared baking sheet and bake for 45 minutes or until tender when pierced with a knife. Remove from the oven and allow to cool for about 10 minutes.

Return the loaded potato skins to the oven and bake for another 10-12 minutes, or until the cheese is melted and bubbly with golden spots.
