Ingredients

  • 1.5 pounds ground beef (80/20 lean-to-fat ratio)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 4 slices provolone cheese slices
  • 4 buns brioche burger buns
  • 4 slices thick-cut bacon
  • 0.25 cup barbecue sauce
  • 8 pieces pickle slices
  • 4 leaves lettuce leaves
  • 4 pieces tomato slices
  • 2 tablespoons mayonnaise

Directions

Step 1

Preheat a skillet or grill to medium-high heat.

Step 2

In a large mixing bowl, combine the ground beef, salt, black pepper, garlic powder, and smoked paprika. Mix gently until just combined.

Step 3

Divide the beef mixture into 8 equal portions. Flatten each portion into a thin patty about 4-5 inches in diameter.

Step 4

Cook the bacon in a skillet over medium heat until it becomes crispy. Remove and set aside on paper towels to drain.

Step 5

In the same skillet, add 2 tablespoons of unsalted butter and sauté the thinly sliced onions until they are caramelized and golden brown, about 8-10 minutes. Set aside.

Step 6

Cook the beef patties on the preheated skillet or grill for 2-3 minutes per side, or until they are fully cooked. During the last minute of cooking, place a slice of provolone cheese on top of 4 patties and cover to melt.

Step 7

Toast the brioche buns on the skillet or grill until they are lightly golden, about 1-2 minutes.

Step 8

Assemble the burgers: Spread mayonnaise on the bottom half of each bun. Add a lettuce leaf, tomato slice, and a beef patty without cheese. Top with a second beef patty (the one with melted cheese).

Step 9

Layer the caramelized onions, crispy bacon, pickle slices, and a drizzle of barbecue sauce on top of the second patty.

Step 10

Finish by placing the top bun over the loaded burger. Secure with a skewer or toothpick, if needed.

Step 11

Serve immediately and enjoy your Pittsburgh Steelers Roethlis Burger!
