Slice the haloumi cheese into 1 cm-thick pieces.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
Add the haloumi slices to the skillet and cook for 2-3 minutes per side, or until golden brown. Remove from the pan and set aside.
Preheat the oven to 375°F (190°C).
Place the pita bread on a baking tray and brush lightly with 1 tablespoon of olive oil. Place in the oven and warm for 3-5 minutes.
While the bread is warming, prepare the tomato topping. Slice the cherry tomatoes in half and finely mince the garlic clove.
