Ingredients

  • 250 g Haloumi cheese
  • 4 pieces Pita bread
  • 2 tbsp Olive oil
  • 1 piece Fresh lemon
  • 200 g Cherry tomatoes
  • 10 leaves Fresh mint leaves
  • 1 piece Garlic clove
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Slice the haloumi cheese into 1 cm-thick pieces.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.

Step 3

Add the haloumi slices to the skillet and cook for 2-3 minutes per side, or until golden brown. Remove from the pan and set aside.

Step 4

Preheat the oven to 375°F (190°C).

Step 5

Place the pita bread on a baking tray and brush lightly with 1 tablespoon of olive oil. Place in the oven and warm for 3-5 minutes.

Step 6

While the bread is warming, prepare the tomato topping. Slice the cherry tomatoes in half and finely mince the garlic clove.

Step 7

In a small bowl, mix the cherry tomatoes, garlic, salt, black pepper, and a squeeze of fresh lemon juice.

Step 8

Take the warm pita breads out of the oven and place them on serving plates.

Step 9

Top each pita with 2-3 slices of cooked haloumi cheese.

Step 10

Spoon some of the tomato mixture over the haloumi and garnish with fresh mint leaves.

Step 11

Serve immediately with lemon wedges on the side for extra zest.
