Ingredients

  • 4 tablespoons olive oil
  • 1 large, diced onion
  • 2 minced garlic cloves
  • 1 medium, diced red bell pepper
  • 1 medium, diced green bell pepper
  • 1 medium, diced eggplant
  • 1 medium, diced zucchini
  • 4 large, peeled and chopped ripe tomatoes
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 0.5 teaspoon paprika (optional)
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet or frying pan over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the diced red and green bell peppers. Cook for 4-5 minutes, stirring occasionally, until the peppers start to soften.
