Ingredients

  • 2 sheets Frozen puff pastry sheets
  • 1 cup Shelled pistachios
  • 0.5 cup Powdered sugar
  • 0.25 cup Unsalted butter
  • 2 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 Egg yolk
  • 1 teaspoon Water
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the frozen puff pastry sheets according to the package instructions.

Step 3

In a food processor, blend the shelled pistachios and powdered sugar until finely ground and well combined.

Step 4

Add unsalted butter, heavy cream, and vanilla extract to the pistachio mixture in the food processor. Blend until smooth to create the pistachio cream filling.

Lightly flour a clean surface and roll out the puff pastry sheets to smooth the creases. Cut each sheet into 8 equal rectangles (for a total of 16 rectangles).

Place about 1 tablespoon of the pistachio cream filling in the center of half of the rectangles, leaving a small border around the edges.

Brush the edges of the filled rectangles with the egg wash (made by whisking the egg yolk and water together).
