Ingredients

  • 150 grams Pistachios
  • 100 grams Granulated sugar
  • 100 grams Unsalted butter
  • 250 grams All-purpose flour
  • 1 teaspoon Salt
  • 60 milliliters Ice water
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 2 tablespoons Milk
  • 50 grams Powdered sugar

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a food processor, combine the pistachios and half of the granulated sugar, then pulse until finely ground. Set aside.

Step 3

To make the pastry, sift together the flour and salt in a large bowl.

Step 4

Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Add ice water a tablespoon at a time, mixing with a fork, until the dough begins to clump together.

Turn the dough onto a lightly floured surface and knead gently into a ball. Flatten into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
