Ingredients

  • 1 cup Unsalted butter, softened
  • 0.75 cup Powdered sugar
  • 1 teaspoon Pure vanilla extract
  • 2 cups All-purpose flour
  • 0.5 cup Cornstarch
  • 0.25 teaspoon Salt
  • 0.75 cup Unshelled pistachios, finely chopped
  • 1 cup Additional powdered sugar (for coating)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

Using a hand or stand mixer, cream the softened butter and powdered sugar together in a large mixing bowl until light and fluffy, about 2-3 minutes.

Step 3

Mix in the vanilla extract until fully incorporated.

Step 4

In a separate bowl, whisk together the flour, cornstarch, and salt.

Step 5

Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. The dough will be soft.

Step 6

Fold in the finely chopped pistachios until evenly distributed throughout the dough.

Step 7

Using a tablespoon-sized scoop or your hands, roll the dough into small balls and place them on the prepared baking sheets, spacing them 1 inch apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just lightly golden. Do not overbake.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, roll each cookie gently in the additional powdered sugar until fully coated. Shake off any excess sugar.

Step 11

Serve immediately or store in an airtight container at room temperature for up to 1 week.
