Ingredients

  • 200 grams Raw pistachios, unsalted
  • 150 grams Granulated sugar
  • 100 grams Unsalted butter
  • 150 grams All-purpose flour
  • 250 grams Cream cheese
  • 100 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Lemon juice
  • 200 milliliters Heavy cream
  • 0.5 teaspoon Cardamom powder
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Line an 8x8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.

Step 3

In a food processor, combine the pistachios, 100 grams of granulated sugar, and salt. Blend until finely ground.

Step 4

Melt 100 grams of unsalted butter and add it to the pistachio mixture along with the flour. Pulse until the mixture forms a crumbly dough.

Step 5

Press the dough evenly into the prepared baking pan.

Step 6

Bake for 15-20 minutes until the edges turn golden. Cool completely in the pan on a wire rack.

For the cream layer, beat the cream cheese and powdered sugar together until smooth and creamy.

Add the vanilla extract, lemon juice, heavy cream, and cardamom. Beat until the mixture is fluffy and holds soft peaks.
