Ingredients

  • 100 grams Unshelled pistachios
  • 80 grams Granulated sugar
  • 500 milliliters Whole milk
  • 250 milliliters Heavy cream
  • 35 grams Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 20 grams Powdered sugar
  • 20 grams Chopped pistachios

Directions

Step 1

Blanch the 100 grams of unshelled pistachios by boiling them in water for 2-3 minutes.

Step 2

Drain the pistachios and immediately transfer them into a bowl of ice-cold water to stop the cooking process.

Step 3

Peel the skins off the pistachios and pat them dry using a clean kitchen towel.

Step 4

Add the peeled pistachios and granulated sugar (80 grams) to a food processor. Blend until a fine powder forms, then add 3 tablespoons of milk from the measured 500 milliliters and blend into a smooth pistachio paste.

Step 5

In a medium saucepan, whisk together cornstarch (35 grams) and the remaining milk (about 470 milliliters) until smooth.

Step 6

Place the saucepan over medium heat and add the pistachio paste, vanilla extract (1 teaspoon), and salt (0.25 teaspoon). Stir constantly until the mixture thickens, about 7-10 minutes.

Step 7

Remove the saucepan from the heat and allow it to cool slightly. Transfer the mixture to serving glasses or bowls and chill in the refrigerator for at least 2 hours.

In a separate mixing bowl, whip the heavy cream (250 milliliters) with the powdered sugar (20 grams) until soft peaks form.
