Ingredients

  • 1 cup couscous
  • 1.5 cups vegetable broth
  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

In a medium pot, bring the vegetable broth to a boil.

While the broth is heating, place the couscous in a large heatproof bowl.
