Ingredients

  • 170 grams unsalted butter
  • 150 grams granulated sugar
  • 100 grams brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 260 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 100 grams pistachios, shelled and roughly chopped
  • 120 grams dried cherries, roughly chopped
  • 100 grams white chocolate chips (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Add the egg and vanilla extract to the butter-sugar mixture. Beat until well combined.
