Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 tablespoons olive oil

  • 1 whole (zested and juiced) orange
  • 1 whole (zested and juiced) lemon
  • 0.5 cups pistachios (shelled)
  • 0.25 cups fresh parsley (chopped)
  • 2 tablespoons fresh mint (chopped)
  • 0.25 cups dried cranberries
  • 2 whole green onions (sliced thinly)
  • 0.25 teaspoons black pepper

Directions

Step 1

In a medium saucepan, bring the water, 1 tablespoon of olive oil, and salt to a boil.

Remove the saucepan from the heat, stir in the couscous, and immediately cover with a lid. Let it stand for 5 minutes.

Fluff the couscous with a fork to break up any clumps, and transfer it to a large salad bowl to cool slightly.
