Ingredients

  • 4 tablespoons Unsalted butter
  • 1 cup Powdered sugar
  • 3 Egg whites
  • 1 teaspoon Vanilla extract
  • 0.6667 cup All-purpose flour
  • 2 tablespoons Whole milk
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 400°F (200°C). Prepare two baking sheets by lining them with silicone baking mats or parchment paper.

Step 2

In a small saucepan over low heat, melt the butter until fully liquefied. Remove from heat and let it cool slightly.

Step 3

In a mixing bowl, sift together the powdered sugar and flour. Add the salt and stir to combine.

Step 4

In a separate large bowl, whisk the egg whites until foamy but not stiff. Gradually add the dry ingredients to the egg whites, whisking gently.

Step 5

Stir in the melted butter, milk, and vanilla extract until you have a smooth, slightly thin batter.

Step 6

Using a small offset spatula or the back of a spoon, spread 1 1/2 teaspoons of batter into thin 3-inch circles on the prepared baking sheet, spacing them at least 2 inches apart.

Step 7

Bake one sheet at a time for 5-7 minutes, or until the edges of the cookies are golden brown. Keep an eye on them, as they can burn quickly.

Step 8

Working quickly, use a thin spatula to lift one cookie off the sheet. Place the edge of the cookie against a thin dowel, chopstick, or the handle of a wooden spoon and roll it tightly to form a cylindrical shape. Repeat with the remaining cookies immediately, as they harden as they cool.

Step 9

If the cookies become too stiff to roll, return the baking sheet to the oven for 30 seconds to soften them.

Step 10

Let the rolled cookies cool completely on a wire rack. Store in an airtight container to maintain their crispness for up to 1 week.
