  • 1 kg Whole chicken
  • 60 ml Olive oil
  • 2 tablespoons Lemon juice
  • 4 Garlic cloves
  • 3 Bird's eye chilies
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Red wine vinegar

Directions

Step 1

Begin by spatchcocking the chicken: using sharp kitchen scissors, remove the backbone by cutting along either side of it. Open the chicken out and flatten the breastbone with the heel of your hand.

Step 2

In a blender, combine the olive oil, lemon juice, peeled garlic cloves, bird's eye chilies (adjust amount for preferred heat), smoked paprika, dried oregano, salt, black pepper, and red wine vinegar. Blend until smooth to form the piri piri marinade.
