Ingredients

  • 4 tbsp Dry mustard powder
  • 1 cup White vinegar
  • 1 cup Granulated sugar
  • 2 tbsp Cornstarch
  • 1 cup Water
  • 3 large Egg yolks
  • 1 tsp Salt
  • 0.5 tsp Ground turmeric
  • 0.5 tsp Cayenne pepper

Directions

Step 1

In a medium-sized mixing bowl, whisk together the dry mustard powder and white vinegar. Let the mixture sit for 1 hour to allow the flavors to meld.

Step 2

In a small bowl, mix the cornstarch with 1/4 cup of water to create a slurry. Set aside.

Step 3

In a saucepan, combine the granulated sugar, remaining 3/4 cup of water, salt, turmeric, and cayenne pepper. Heat over medium heat, stirring frequently, until the sugar is dissolved.

Step 4

Reduce the heat to low and gradually whisk in the vinegar-mustard mixture.

Step 5

Gently whisk the egg yolks into the saucepan. Continue to cook on low heat, stirring constantly, to prevent curdling. The mixture should begin to thicken after 3-4 minutes.

Step 6

Slowly add the cornstarch slurry while whisking continuously. Cook for another 2-3 minutes until the sauce reaches your desired thickness.

Step 7

Remove from heat and allow the sauce to cool to room temperature.

Step 8

Transfer the mustard sauce to a jar or airtight container and refrigerate for up to 2 weeks. The flavors will deepen over time.
