Ingredients

  • 8 cups Popped popcorn
  • 2 cups Salted pretzel twists
  • 1 cup Mixed nuts
  • 0.5 cup Dried pineapple chunks
  • 0.5 cup Dried cranberries
  • 0.5 cup Unsalted butter
  • 0.75 cup Brown sugar
  • 0.25 cup Light corn syrup
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Baking soda
  • 0.25 teaspoon Sea salt
  • 0.5 cup Dark chocolate chips (optional, for drizzle)

Directions

Step 1

Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the popped popcorn, pretzels, mixed nuts, dried pineapple chunks, and dried cranberries. Toss to mix evenly.

Step 3

In a medium saucepan over medium heat, melt the butter. Add the brown sugar and corn syrup, stirring continuously until it comes to a boil.

Step 4

Once boiling, let the mixture cook for 3-4 minutes without stirring. Remove it from heat and quickly stir in the vanilla extract, baking soda, and sea salt. The mixture will bubble slightly.

Step 5

Pour the caramel mixture over the popcorn mix in the bowl. Using a spatula, gently toss until the mix is evenly coated.

Step 6

Spread the mixture evenly onto the prepared baking sheet. Bake for 15 minutes, stirring halfway through to ensure even coating.

Step 7

If desired, melt the dark chocolate chips in the microwave in 20-second intervals, stirring between each until smooth. Drizzle over the baked snack mix once it has cooled slightly.

Step 8

Allow the snack mix to cool completely on the baking sheet. Break into clusters and store in an airtight container for up to a week.
