Warm the milk to about 37°C (98°F) in a small saucepan or microwave, ensuring it's lukewarm but not hot.
In a large mixing bowl, dissolve the sugar in the warmed milk. Sprinkle the yeast over the milk and let it sit for 5-10 minutes or until foamy.
Melt the butter and allow it to cool slightly. Add the melted butter, one egg, and salt to the yeast mixture. Stir to combine.
Gradually add the flour to the wet ingredients, mixing until a soft dough forms. Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.
Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
Meanwhile, prepare the filling by frying the chopped bacon and diced onion in a skillet over medium heat until the bacon is crispy and the onions are softened. Drain any excess fat and season the mixture with black pepper. Set aside to cool.
Once the dough has risen, punch it down and divide it into two equal portions for easier handling. Roll out one portion on a floured surface to about 4 mm (1/8 inch) thickness.
Using a round cookie cutter (about 7-8 cm in diameter), cut out circles from the dough. Place a small spoonful of the bacon and onion filling in the center of each circle.
Fold each circle in half to create a crescent shape, pinching the edges tightly to seal the roll. Repeat with the second portion of dough.
Preheat the oven to 200°C (400°F) and line baking sheets with parchment paper.
Place the formed rolls seam-side down on the prepared baking sheets, leaving space between each roll to allow for expansion during baking.
Whisk the egg yolk with water to create an egg wash. Lightly brush the top of each roll with the egg wash for a golden brown finish.
Bake the rolls in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
