  • 500 grams Prince Edward Island potatoes
  • 200 grams Green beans
  • 2 whole Roasted red peppers
  • 3 tablespoons Olive oil
  • 1 tablespoon Dijon mustard
  • 1.5 tablespoons Red wine vinegar
  • 1 clove Garlic
  • 1 teaspoon Honey
  • 0.5 teaspoon Crushed red chili flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash the Prince Edward Island potatoes thoroughly and cut them into bite-sized cubes.

Step 2

Place the potatoes in a large pot of salted water and bring to a boil. Cook for 12-15 minutes, or until fork-tender. Drain and set aside to cool slightly.

Step 3

While the potatoes are cooking, trim the ends off the green beans and blanch them in a pot of boiling water for 2-3 minutes. Immediately transfer to an ice bath to stop the cooking process, then drain and set aside.
