  • 1 medium Yellow onion
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 2 Garlic cloves
  • 2 medium Fresh tomatoes
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 large Eggs
  • 2 Baguette or crusty sandwich rolls
  • 1 tablespoon Butter
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Peel and thinly slice the onion. Deseed and thinly slice the red and green bell peppers.

Step 3

Add the onion and bell peppers to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened.

Step 4

Mince the garlic and dice the tomatoes.

Step 5

Add the garlic to the skillet and sauté for another 1 minute until fragrant.
