Piparkakut Finnish Ginger Cookies

Transport your taste buds to the heart of Scandinavia with Piparkakut, traditional Finnish ginger cookies that boast a delightful balance of warm spices and rich, buttery flavor. These crisp, wafer-thin cookies are infused with aromatic cinnamon, ginger, cloves, cardamom, and nutmeg, creating a symphony of holiday-inspired tastes. Made with a touch of dark syrup or molasses, the dough develops a deep, caramel-like sweetness that perfectly complements the spice blend. The dough is chilled overnight to allow the flavors to fully develop, resulting in intensely fragrant cookies that are as delicious as they are beautiful. Perfectly suited for festive occasions, these cookies can be cut into whimsical shapes and decorated with icing, making them a charming centerpiece for any holiday gathering. Whether served alongside your favorite coffee, tea, or mulled wine, Piparkakut is the ultimate way to celebrate Finnish culinary traditions and the cozy flavors of the season.

Ingredients

  • 200 grams unsalted butter
  • 200 grams granulated sugar
  • 150 grams dark syrup (molasses can be used as a substitute)
  • 100 milliliters heavy cream
  • 500 grams all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cardamom
  • 0.5 teaspoon ground nutmeg

Directions

Step 1

In a medium saucepan, melt the butter over low heat. Once melted, stir in the granulated sugar and dark syrup (or molasses) until fully combined. Remove from heat and let the mixture cool slightly.

Step 2

In a small bowl, whisk together the heavy cream and the cooled butter mixture until smooth.

Step 3

In a large mixing bowl, sift together the all-purpose flour, baking soda, cinnamon, ginger, cloves, cardamom, and nutmeg.

Step 4

Gradually add the liquid ingredients into the dry ingredients, mixing well to form a soft dough. Do not overmix.

Step 5

Wrap the dough tightly in plastic wrap and refrigerate for at least 4 hours or, ideally, overnight. This allows the spices to meld and the dough to firm up.

Step 6

Preheat your oven to 175°C (350°F) and line baking sheets with parchment paper.

Step 7

On a lightly floured surface, roll out the chilled dough to about 2-3 millimeters thick. Using cookie cutters, cut the dough into desired shapes (such as hearts, stars, or rounds).

Step 8

Place the cookie shapes onto the prepared baking sheets, leaving a little space between them for spreading.

Step 9

Bake in the preheated oven for 6-8 minutes, or until the edges are lightly golden brown. Keep a close eye on them as they can burn quickly due to their thinness.

Step 10

Remove the baking sheets from the oven and let the cookies cool for a few minutes on the sheets before transferring them to a wire rack to cool completely.

Step 11

Once cooled, store the cookies in an airtight container. They can be enjoyed plain or decorated with icing if desired.
