Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 medium, sliced Red bell pepper
  • 1 medium, sliced Yellow bell pepper
  • 3 cloves, minced Garlic
  • 2 cups Heavy cream
  • 0.75 cup, grated Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 12 ounces Penne pasta
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Bring a large pot of salted water to boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 2

Slice the chicken breasts into thin strips. Evenly coat the chicken with 1 tablespoon of Cajun seasoning.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken strips and cook, stirring occasionally, until browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the sliced red and yellow bell peppers. Cook for 3-4 minutes until softened.

Add the minced garlic to the skillet and cook for an additional 30 seconds until fragrant.

Reduce heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese, the remaining 1 tablespoon of Cajun seasoning, salt, and black pepper. Allow the sauce to simmer for 3-4 minutes until thickened.

Return the cooked chicken to the skillet and toss to coat it in the sauce.

Add the cooked and drained penne pasta to the skillet, gently tossing to combine and evenly coat the pasta in the sauce.

Step 9

Sprinkle with freshly chopped parsley and serve immediately.
