Ingredients

  • 4 pieces Corn tortillas
  • 2 tablespoons Vegetable oil
  • 6 large Eggs
  • 2 tablespoons Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cups Onion, diced
  • 0.5 cups Green bell pepper, diced
  • 1 medium Tomato, diced
  • 1 small Jalapeño, diced (optional)
  • 1 cups Shredded cheddar cheese
  • 2 tablespoons Chopped fresh cilantro
  • 0 Salsa (for serving)
  • 0 Avocado slices (for serving)

Directions

Step 1

Cut the corn tortillas into small strips or squares, about 1 inch in size.

Step 2

Heat the vegetable oil in a large skillet over medium heat. Add the tortilla pieces and fry them until crispy and golden brown, about 4–5 minutes. Remove from the skillet and set aside on a paper towel to drain excess oil.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, and black pepper. Set aside.

Step 4

In the same skillet, remove any excess oil, leaving about 1 tablespoon. Add the diced onion and green bell pepper. Sauté for 2–3 minutes until softened.

Step 5

Stir in the diced tomato and jalapeño (if using), and cook for an additional 1–2 minutes.

Step 6

Reduce the heat to low. Pour the egg mixture into the skillet with the sautéed vegetables. Allow the eggs to cook gently, stirring frequently, until they are slightly scrambled and still soft, about 3–4 minutes.

Step 7

Add the crispy tortilla pieces to the skillet, folding them gently into the eggs and vegetables.

Step 8

Sprinkle the shredded cheddar cheese over the top, and let it melt for 1–2 minutes.

Step 9

Garnish with chopped cilantro.

Step 10

Serve immediately, accompanied by salsa and avocado slices, if desired.
