Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 4 ounces Canned green chilies, diced
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 8 pieces Flour tortillas (8-inch)
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 cups Canned enchilada sauce
  • 2 tablespoons Canola oil
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, add the canola oil and sauté the diced onion for 2-3 minutes until softened.

Step 3

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

Step 4

Stir in the diced green chilies, paprika, cumin, chili powder, and salt. Mix well and cook for another 2 minutes, allowing the spices to meld with the beef. Remove from heat and set aside.

Step 5

Pour 1 cup of the canned enchilada sauce into the bottom of a 9x13-inch baking dish, spreading it evenly.

Step 6

Divide the cooked beef mixture evenly among the flour tortillas. Sprinkle each with a handful of cheddar cheese and Monterey Jack cheese. Roll each tortilla tightly and place seam-side down in the prepared baking dish.

Step 7

Pour the remaining 1 cup of enchilada sauce over the rolled tortillas, ensuring they are evenly coated.

Step 8

Sprinkle the remaining cheddar and Monterey Jack cheese evenly over the top of the enchiladas.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 10

Remove the foil and bake for another 10 minutes, until the cheese is melted and bubbly.

Step 11

Optional: Garnish with chopped fresh cilantro before serving.

Step 12

Serve the enchiladas warm with your favorite sides such as rice, beans, or a fresh salad.
