Ingredients

  • 500 grams Lamb shoulder (boneless)
  • 3 cloves Garlic
  • 2 teaspoons Cumin seeds
  • 1 teaspoon Paprika
  • 1 teaspoon Ground turmeric
  • 1 pinch Saffron threads
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (chopped)
  • 8 pieces Wooden skewers (soaked in water for 30 minutes prior to grilling)

Directions

Step 1

Cut the lamb shoulder into 2-inch cubes and set aside.

Step 2

In a mortar and pestle or spice grinder, crush the cumin seeds slightly to release their aroma.

In a mixing bowl, combine the crushed cumin seeds, minced garlic, paprika, turmeric, saffron, lemon juice, olive oil, salt, and black pepper. Mix well to form a marinade.

Add the lamb cubes to the marinade and toss until the meat is thoroughly coated. Cover and refrigerate for at least 2 hours, or preferably overnight for deeper flavor.
