Ingredients

  • 2 sheets puff pastry sheets
  • 500 g sausage meat
  • 50 g breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons flour (for dusting)
  • 2 tablespoons milk (for brushing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line two baking sheets with parchment paper.

Step 2

Lightly dust a clean work surface with flour. Roll out the puff pastry sheets (if not pre-rolled) into rectangles approximately 30 cm x 25 cm.

Step 3

In a large bowl, combine the sausage meat, breadcrumbs, egg, parsley, thyme, salt, and black pepper. Mix thoroughly until evenly combined.

Step 4

Divide the sausage mixture in half and spread each portion evenly over one puff pastry sheet, leaving a 1 cm border along one long edge.

Step 5

Starting from the opposite long edge, carefully roll the pastry up tightly into a log shape. Use a bit of water to seal the edge of the pastry.

Step 6

Place the logs seam-side down and refrigerate for 15 minutes to firm up the pastry, making it easier to slice.

Step 7

After chilling, slice each log into approximately 8 pinwheels using a sharp knife.

Step 8

Place the pinwheels cut-side up on the prepared baking sheets, leaving some space between them to allow for expansion.

Step 9

Brush the tops of the pinwheels lightly with milk to help them achieve a golden, glossy finish.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown and the sausage is cooked through.

Step 11

Remove from the oven and allow to cool slightly before serving.

Step 12

Serve warm or at room temperature. These pinwheel sausage rolls are perfect on their own or with your favorite dipping sauce.
