Ingredients

  • 1 cup Basmati rice (or any long-grain rice)
  • 1 medium Beetroot
  • 2 cups Water
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 medium Onion, finely diced
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro or parsley (optional, for garnish)

Directions

Step 1

Wash the rice thoroughly under cold water until the water runs clear. Drain and set aside.

Step 2

Peel the beetroot and finely grate it using a box grater. Set aside.

Step 3

In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and diced onion, then sauté until the onion is soft and translucent, about 3–4 minutes.

Stir in the grated beetroot and cook for another 2 minutes, allowing the vibrant color to develop.

Add the rinsed rice to the saucepan and stir gently to coat it with the beetroot mixture.
